Almost Payday Pasta
This is a quick and easy pasta using tasty things you can find in your cupboard and fridge.
Prep: 5 Mins. Cook: 20 Mins.
Makes enough for two. Scale the quantities for more.
A quick and easy recipe made with caramelised shallots/ onion, a little red wine, puree from the cupboard and a handful of grated cheese. A totally delicious and simple delight.
Ingredients:
4 banana shallots or 1 large onion.
1 tbsp garlic puree.
1 tbsp tomato puree.
50ml left over red wine.
200g of any pasta
Sprinkling of cheese
Salt & Pepper
Pesto.
Method:
Bring a pan of water to the boil and add the pasta.
Halve the shallots/ onion and cut into slices.
Caramelise with a few glugs of oil in a pan on medium/ high heat.
Add the purees and cook out for a minute.
Pour in the red wine and allow to reduce for five minutes.
Take the pasta off the heat and drain.
Pop the pasta into the pan.
Season with salt & pepper.
Top with pesto, a handful of grated cheese and enjoy!
